Awesome Origanum
Oregano pairs very well with tomatoes and other Mediterranean herbs, such as basil. You can also make a marinade or sauce with other ingredients that pair well with oregano. These include olive oil, garlic, basil, onion and thyme. They pair well with lamb, beef or chicken.

Sweet Basil
Basil is a herb that adds a depth and flavor when hydrated. You can use it in all and any Italian and/or Thai cooking. Wherever the recipe states "Sweet Basil" add our dried basil leaves and taste the difference. I use it most frequently in pasta sauce. ...and then also in every other meal.

Quick Tip: Dried herbs should be HYDRATED, not cooked. This means that it is always recommended that you add herbs near the end of the meal. Hydration releases FLAVOUR and AROMA. Cooking kills it. Now you're thinking: Why didn't anyone tell me that before? Well let's not dwell on the past, let's get the flavour and aroma pumping :-)

This perfectly mastered drying method BEATS SEASONALITY. I now have sweet basil 12 months of the year.

Fragrant Rosemary
Probably most commonly used when roasting lamb. Rosemary is also great for baking bread, in chicken soup, and adds flavour vegetables when roasting them.

A friend recently recommended that i grind a table spoon full in the mortar and pestle, then roll 1cm thick sliced chicken breast fillets in it and fry in medium heat using our Real City Food Canola/Extra Virgin Olive Oil 80%/20% blend. (Available here) You WILL write to your Mama about how delicious it is!!!

French Tarragon
The anise flavor goes well in tomato dishes and when flavouring chicken. Used sparingly, tarragon makes a nice seasoning for fish and seafood dishes, and with eggs. Also add a table spoon full to green salads and prepare to be bombarded with questions like: "Care to reveal your secret to this very different, delicious flavour?"

It's Thyme

Thyme is sweet and delicious with fish and in tomato pasta dishes. The delicate woodsy flavor is a great choice for adding layers of flavor without being overwhelming.
